It's cold here, about 50. ;) Anyways it's put me in the mood for cooking. Now making Chili (http://www.topsecretrecipes.com/Wendys-Chili-Copycat-Recipe.html) and Crockpot Ravioli (http://becomingbetty.blogspot.com/2011/03/crock-pot-ravioli-casserole.html). I'll have at least 2 weeks meals in my freezer!
Both call for browned ground beef, so a leg up on not taking too much time.
I browned the ground round all at once, adding onion and garlic, even though the chili recipe doesn't call for garlic. Can never have too much garlic! Vampires have not bothered me, ever!

Since moving to Sedona I haven't been able to find "Brooks Chili Hot Beans" which was main base for my chili. After trying some of the beans they do offer, I've given up on my standby chili recipe. Thus returning to finding some recipes that use other types of beans.
I made this white chili recipe (http://www.foodnetwork.com/recipes/melissa-darabian/melissa-darabians-white-chili-white-quick-roasted-garlic-recipe.html) a couple weeks ago, really good but took a lot of time.

Sweet, what a coincidence, I made chili for dinner tonight! Used bison beef, onions, tomato sauce & assorted spices. Let the yumminess sit in the crock pot for about 4 hours. First time trying the bison for chili. I used it before to make burgers and they were MUCH better than regular.

Bison is really tasty and often cheaper here than ground sirloin. I doubt true in the Midwest, but works for me in AZ.

Damn, what I get here is like 2x as expensive as the regular ground beef I would get. But it's worth it, the flavor is so much better.

Couldn't help myself. In the past hour I threw in a cup and half of white corn and a package of chopped spinach. So much fiber, good thing I'm not working tomorrow! LOL!

Today I am going to be making spaghetti sauce with a pound of bacon, red and yellow peppers, basil, garlic of course, black peppers diced tomatoes,
I will share the recipe
3 large cans of Dei Fratell diced tomatoes, I use the seasoned version.
1lb of fried bacon, crumbled
diced red and yellow peppers, diced onions, and garlic all sauteed in left over bacon grease
Add diced peppers, onions and garlic in tomatoes, along with the bacon drippings,. Add 2 teaspoons of basil or more to your liking. 1 teaspoon of black pepper, I love black pepper, so I add a lot ;). 1/2 tsp of red chilis.
Cook between medium to low heat for 6 hours.
Serve over your favorite pasta, sprinkle fresh shredded Parmesan cheese. I like Frigo parmesan.

I tend to like Wendy's chili, so my chili isn't the traditional kind. More tomatoes, beans, etc. But that's how I like it. Oh, and with shredded raw onion and lots of grated cheddar on top!
Snow on the ground here, freezing all week....I opted for the jambalaya with red kidney beans and chicken and cheese. Comfort food!

I sat at a wrestling meet all day today ( WE WON ) so we're having left over beef stew from last night. The truly great thing about stew is that it's even better the next day. ;)

If you checked out my OP, the chili recipe was a Wendy's hack. ;) I did use the red kidney beans and also pinto beans. After a couple hours decided to add another can of red kidney beans and a package of baby spinach and some corn. I started out with the spice recommendations, though I did add garlic to the meat while browning. Before adding additional beans and veggies, I upped the chili powder, added cumin, and some hot sauce. I like spicy.

Wrestling is long over down here, I sat Friday night and all day yesterday at baseball games, man I wish we where still sitting in the heated gym, to dang cold for baseball :laugh:

That is just weird. I cannot find Mrs. Pauls fish stick anywhere. I used to have them as a kid. I suppose I live in the wrong part of the country. I have found that Gortons is as good though.

We had this last night for supper. It is sooooo good and easy. We leave out the onion soup mix, and, only cook it 1 hour 45 minutes as it tends to burn the rice if cooked longer. Also, we only use chicken breast slices. Very tasty.

NO PEEK CHICKEN AND RICE CASSEROLE
1 tbsp. butter
1 can cream of celery soup
1 can cream of mushroom soup
1 can water
1 c. reg. rice
1 pkg. Lipton onion soup mix
1 frying chicken
Melt butter in bottom of 9x13 inch baking dish. Add cans of soup, water and rice. Mix well. Place cut up chicken on top of mixture. Sprinkle onion soup on top of chicken. Cover with foil or lid. Bake in moderate oven for 2 hours at 350 degrees. Don't lift lid during baking time.

I've been working way too much lately, but got yesterday and today off! Yesterday drove my pilot friend to Sky Harbor in Phoenix. Obviously drove home myself, in her BMW Convertible, sweet! I do miss my convertible, two cars ago. She's gone until end of April, she asked me to do her a favor and take the car out once in awhile. :cool:
Today though, or at least this morning, cooking. Beef stew already in crockpot for 3 hours, soon will add the veggies. Roasted chicken in oven at 425 for 15, then 375 for an hour 15.
I have the blackberries macerating now, when chicken is done, blackberry cobbler will go in.
I'm set for a week of dinners and lunches. ;)

Just made a big batch of home made chili in my crock pot. six hours on low and MMMMM. Now have to tackle chicken parm I am making for lunch at work tomorrow. One of the docs is leaving and we are using it as an excuse to make Monday happy.

Did beef stew tonight. Some inexpensive beef cubes, potatoes, carrots, pearl onions and mushrooms. Dip the beef in flour and brown it in a pan. In the slow cooker, a packet of McCormick stew seasoning and 2 cups water and one of beef stock and a Tbsp of tomato paste. Add the browned beef and cook on low 4 hours. Some of that stuff is going to work with me tomorrow.

I don't care for Mexican food, and we had Enchiladas for dinner tonight. :puke: So, later this evening when I snack, I have awesome choices between Stouffer French Bread pizzas, hot pockets, teriyaki beef jerky, peanut butter cookies & pringles. And don't worry 'bout my health, as I also cut up some fresh strawberries and melon. :)

I have two large pressure cookers that I use for picnics to cook "corn on the cob" for over 100 people who bring something to eat to the picnic. I set them on two propane burners. I pick up two bags of fresh picked corn on the cob, fresh picked from a local farm, early in the morning of the picnic. The bags consist of five dozen ears apiece. I pressure cook them at 5 pounds pressure for 10 minutes.
You have to cook and eat the corn within 24 hours of picking, or the sugars will be gone out of the corn and all that is left is starch. Several come back for seconds, and the ears are huge. I cut some in half on request for the kids.
I recall one woman who came back for seconds, saying it was really delicious, and asked where I got the corn from. I told her, and she mentioned that she got some corn on the cob from the grocery store the other day and it tasted like cardboard. That's when I told her about the time limit on the corn.

Tonight it was a seafood medley, from H-Mart in Federal Way, with shrimp, scollops, mussels, calamari and some gelatinous thing I don't know what it was. It tasted nondescript. I'll have to google the description and see what comes up. It was all excellent.
I got the CSA box today so tomorrow night is veg night.

Yesterday, I made boneless pork chops in the grill pan then basted them with Sweet Baby Ray's - and broccoli, raisin and onion salad.
Had the leftovers tonight!

Tonight was a filet mignon i grilled the other day and re-heated in my favorite cast iron sauté pan using bacon grease and butter. On the side was college cheese and a brownie and milk for dessert.

Nothin' like a great filet. Then, there's a great London Broil. Filet mignon, bout 1 1/2 inches thick, lightly pink, mouthwatering. I better shut up. Looks like OUTBACK, or RUTH's is gonna get a visit soon.

I went to a mexican joint with a friend and had the mixed fajita platter.
That was steak, chicken and tiger shrimp with peppers, tomatoes and onions on the huge sizzling skillet with the 3 tortillas on the side.
Then the other plate with lettuce, tomatoes, refried beans, rice, guacamole and sour cream.
I should have passed on the chips and salsa they bring out to munch on, as I left a lot of that food behind.

The Canuk's closed down all The Keg's in WA
and breaks my steak house heart.
Mine was a re-heated steak but still quite good.

I'd have to go to Bellevue or Seattle for Ruth's.
Tacoma has an El Gaucho and only go once a year. $$$
I do a decent steak on the Weber but it's nice to be waited on once in a while.
Next time in Whistler I'll go to The Keg.
There's a Mexican place I go to that does not serve chips and salsa and has a big sign saying so as you enter. It's the only place in Tacoma I can get goat, too.
My turn cook tonight so making chilaquiles. It breakfast dish but girlfriend likes. We sometimes eat breakfast for dinner.

OK so we all know it, the rice junk is dog food, she just doesn't know it yet.

Last night we had some Korean ribs, they were awesome! Tasted like the ribs I get when I order Chinese, only these are Korean for whatever reason, and it wasn't delivered. :)
I never remember to take pictures, I'm too busy seeing how much I can stuff in my fat face. But a quick search shows these, which look awfully close!

She does like to make some things on the weekend, to "pre-prepare" for during the week. And I have some news for ya - if you make crap a few days in advance, it still tastes like crap a few days later! I just stay prepared for emergencies is all.

It's gotten difficult to find meaty beef ribs in my AO.
BJ their was a recipe for some Korean food in the recipe thread and they where fantastic, all I remember was a banana Catchup ( banana sauce) , I have the recipe written down and we will make them again ( and now that I have been reminded I am sure this week sometimes. :laugh: But they where fantastic, not ribs but my God where they good.

Seriously, Laura use to make like Ziti or Lasagna and there are a couple others that actually tasted better after sitting a couple of days, her Chicken and Dumplings is killer until the last spoonful.

I hate Meatloaf, my Mom was one of the best cooks ever, but her Meatloaf and Pork Chops sucked, I hate both to this day, but my ol lady will slip the Pork Chops in once and a while and I love em, but if she is to ask me about them I tell her heck no. Guess it's all in my head now.

Meatloaf? I'll reserve my answer. I'm 55 years old and haven't touched that junk since before I left home. Meatloaf and peanut butter and jelly -- food of the 60s. Oh, and tuna casserole.
We'll be going into combat before I touch that crap. I'd rather have c-rats. (Not MREs .. they're worse than any of that stuff).
And, take it in stride. The people I live with eat all kinds of stuff I just dodge. They're junk food junkies and I'm not at all. So no offense intended. You're entitled to your opinions with me.

I hate it. Was stuck in my lunch box every day for years. I used to trade with this guy named Snyder. He got cooked ham and mustard ever day and all he wanted was peanut butter and jelly. Too bad that was only 5th grade. :laugh:

Have 17 pound brisket in smoker since midnight. Later will make corn cob, brussel sprouts, bread, and salad.

The filling was butternut squash, mushroom, spinach, and roasted garlic. Sauce was pepper, tomato and basil.

Take out the squash and I'll dive in head first. Could probably do without the 'shrooms, but I'm used to them by now as my wife sneaks them into every other thing I eat.

I'm not too keen on mushrooms, the smaller the cuts the better, the huge ones are a defo no. But butternut squash can get in me any time, much taste.

Speaking of dinner, here is a story about such that should never be repeated while having such. :cool:
Two criminals were traveling through the Korean part of town when they passed a business where someone had left a window open. They felt it was a perfect scenario to pull off a heist.
The men went looking for the safe, but couldn't find the light switch, so they picked up the heaviest box in the room and took off with it.
Once the men got outside, they found out they had grabbed a refrigerator instead of a safe. When they opened the door, they found the fridge was full of dead dogs. They dumped it in a corner lot and took off.
As police were investigating the scene, the business owner called to report a stolen refrigerator.
Police called back and said "We did find a refrigerator. Can you describe the contents?"
The business owner relied "Our dinner."
Have chiles rellenos tonight. Having dessert now in form of several cold 12 ounce bottles.
