I bet they would be good honey glazed on a skewer.

The giant rat seems to be a gentle soul

They are raised in some places for their meat and fur.
In Louisiana they have Nutria and the State will five you $4.00 per tail for the critters. I expect they can eat them too

I feel horrible. There was a show on about piranhas on Natgeo last night. I was watching a couple of minutes as they were only showing them swimming and eating other fish. I was stunned when they next showed one of these capybaras walking into the water, and the voice talking about how he didn't know what he was getting himself into. I had to quick change the channel!
For the largest rodent I've ever seen, he does seem kinda cool!

My mother-in-law is visiting. I mentioned to her about people keep capivaras (Portuguese spelling) as pets. She busted out laughing. If you talk about capivara in northern Brazil, it will be a discussion about which is better, the legs or the ribs.

Probably similar to attitudes about dog in China. Or horse elsewhere. Just because a culture eats a particular animal, does not really make it "funny" that others would want to care for it. Compassion and caring should never to be ridiculed.
