At least one if not two in every strip center. If there's isn't one of those between you and the job site, the roach coach comes out stocked with tacos. I can't make Mexican food and don't pretend to know how. I go to the source. :)

These are Fantastic, I had one up in Cherokee and loved it !!

In some parts of NM you will see the Indian women selling the fry bread in stands on the side of the road. Especially up closer to the Colorado border. They make it in little adobe ovens and sell it hot...with honey. Very good.

The NM State Fair and Balloon Fiesta are good places to find really good Indian Taco's though.
