Who doesn't cook with them these days?
The higher the pressure, the higher temp the water begins to boil. Thus you can cook far faster then per norm.

Plus, at higher altitudes, (Water boils at a much lower temp, less air pressure to keep it from jumping) so pressure cookers are kinda needed by those at a higher area. If they want to cook anything in a reasonable time that is.

Pressure cookers (panela de pressão) are very popular in Brazil. We have one and my wife uses it. I see them prominently for sale at most Brazilian-American stores.

My wife says some recipes just aren't the same without a "panela de pressão".

The below recipe got ten pages of satisfied comments.

One commentator says, "It doesn't burn the meat, yet it becomes sooo tender."

Oh my, made it to about a minute and a half and had to stop it. I'd like for one of these people to go around and just interview people, and ask them if they can tell us what the 1st and 2nd amendments are. I'm betting the majority don't know.

Yummy. My mother used to make casseroles in one. Ever since I have just seen them as old fashioned.
