As as a special request for Jim, Amy agreed to do a topples pic, (taken while she was reading Jim's request) I'll just provide it as a link incase any users don't want to see ^,^ http://i80.photobucket.com/albums/j176/jonathan-mcc/236d9296.jpg

Occupy Bath - Well, lol, as you can see they're not a big group. Had a few hours to myself the day I arrived and stumbled upon them, their sign at the park gate said 'Everyone welcome, come in an day hello' so I did. And on the whole they were lovely.

There were only about 8 there when I was there (they have to take it in shifts) and while some of them were a bit politically naive (for which I bit my tounge) all but one of them seemed to genuine enough to me about being concerned as a pose to angry or victimized.

I say all but one because there was one lady who liked the sound of her own voice far too much, and what she had to say was, mostly, nonsense. The kind who would give the rest a bad name, but more out of politeness (and feeling like a guest) I did best to just ignore her.

Anyways, was a few hours well spent just hearing what makes other people tick and why they had given up the comforts of their homes to have spent the last few weeks occupying.

Rawr my fellow DPers!

Justa wee update as I was awake for the weekend in Morzine, France.

Long story short we are season ticket holders with our local ice hockey team the Belfast Giants. Myself, my mum and my wee cousin Britney (10) and her favorite player and our Captain, Colin Shields, left us last year to go play for the Morzine Penguins.

Britney was devastated, however, my mum messaged Colin on Facebook and before he left in the summer he met up with Britney in Belfast...unknown to her my mum also mentioned to him that we were going to try and see him play in Morzine. He said to mail him if we did and he'd come see us.

So we did! Flew into Geneva on Friday and made our way down to Morzine for the weekend, tis a stunningly beautiful place, and the ice hockey was awesome. Very quick and skilled but nowhere near as physical as our league and much more heavily penalized (for example fighting gets you a Match Ban) but an awesome game none the less which (after leading 3-1 going into the third) we lost 4-3 on a penaliry shoot out. and ofcourse Colin came to talk to us after the game, and I was able to chat to another former Giant, Brad Smyth

Anyways back home now ^,^ and some pics of the trip -

That kinda reminds me of when my husband and I were visiting Westminster Abbey. We saw umpteen signs in the downstairs museum saying NO PICTURES! So, of course, my husband takes a picture of the coronation chair of all things! A grey-haired attendant comes literally old- lady hobbling over, shouting, "Who took that picture?!" But by then, the camera was back in his pocket, and we were off innocently looking at one of the effigies. Felt a little like Jame Bond there, lol. :laugh:

Basically eggs and dairy are no-gos obviously, in the most cases you can use soy milk/cream/butter for the milk, creams and butters, and baking soda instead of eggs. They taste *exactly* like normal cakes, and of course are healthier, cruelty free and not as heavy on your tummy ^,^

The recipe amy used for this cake was as follows;

Cake Batter
3 1/2 cups (440 g) unbleached all-purpose or whole-wheat pastry flour
1 1/2 cups (300 g) granulated sugar
2 teaspoons (9 g) baking soda
1 teaspoon (6 g) salt
2 teaspoons (9 g) cocoa powder
2 cups (470 ml) nondairy milk (soy, rice, almond, hazelnut, hemp, or oat. We used Soy)
2/3 cup (155 ml) canola oil
3 tablespoons (45 ml) red food coloring
2 tablespoons (30 ml) distilled white vinegar
2 teaspoons (10 ml) vanilla extract
Ground pecans, for topping (optional)

For Buttercream Frosting:
1/2 cup (112 g) nondairy, nonhydrogenated butter (we used Dairyfree Pure Butter), at room temperature
3 cups (300 g) confectioners' sugar
1 1/2 teaspoons (8 ml) vanilla extract
2 tablespoons (30 ml) nondairy milk (soy, rice, almond, hazelnut, hemp, or oat, we used soy) or water
Assorted food colors (optional)
Shavings of Dairy Free Chocolate.

Nope, if anything its cheaper imo, i mean red meats tend to be pretty expensive, swell as allot of fish round were i live, and the price of dairy (especially cheese and eggs) is wayyy expensive.

But i guess it all depends on were you live and what the local markets are like.

The only Vegan thing that seems to be expensive to me is a) vegan cheese and b) Vegan Chocolate, so i've decided just to cut cheese totally out of my diet and choc is a rare treat.

Do you take other vitamins/supplements to compensate for those that are lost when you cut out dairy, meat, cheese, fish, etc.?

Do you take other vitamins/supplements to compensate for those that are lost when you cut out dairy, meat, cheese, fish, etc.?

Nope. With an active interest in what you eat and what it contains there is no need for any supplements. This is probably the single biggest misconception about being a Vegan, most people instantly jump to 'What about your b12 intake' (fortified foods and drinks take care of that) andd another common one is 'what about your calcium' (not knowing that cows milk is one of the worst sources of calcium because the human body can't process it) then of course there's debates about getting enough protein and so forth, but they are (on the whole) comments made in ignorance and created by the truly amazing PR machine that is the dairy industry.

Only an idiot could become a vegan and not have enough interest in what they eat to know what they need to eat and when.

Won't be on much for the next week as m'lady is over butto share a few things from the weekend just past...

We went to Edinbrugh!
The primary purpose was to watch ice hockey, our team, the Belfast Giants was having a double header against the Edinbrugh Capitals, coming away the victors both nights with 6-3 and 8-0 results, keeping us firmly at the top of the leauge with just 3 games remaining.
http://i80.photobucket.com/albums/j176/jonathan-mcc/78715f2c.jpg

While in Edinbrugh we booked a visit into the local Zoo, which has. En the centre of attention in the UK for quite a few months now, because they have pandas!
A male and a female that have been brought over from China, and seeing them was amazing, the female was right up against the glass so you could sit two feet infront of it, well worth the trek up the hill to it (why are Zoos always built into hillsides?)
http://i80.photobucket.com/albums/j176/jonathan-mcc/b236264e.jpg

The other (surprising) highlight was the noms, being a Vegan it can often be disappointing at best when it comes to eating out as we're very limited, but by chance we stumbled upon a vegan restaurant, and the food was incredible.

I got a 3 bean chili mix in a fillo pastry with mash potato and butternut squash chips in a creamy soup, and Amy had a rice pancake with some filling and a cool tomato salsa and salad, with a side order of Smoked Tofu between us.

My noms
http://i80.photobucket.com/albums/j176/jonathan-mcc/c763afe1.jpg

And Amy's noms
http://i80.photobucket.com/albums/j176/jonathan-mcc/6da591fb.jpg

And lastly but no means leastly, got home in the early hours of the morning to find a large parcel at the door that I wasn't expecting, turning out that Amy has ordered one of my birthday presents and because of its weight she decided to have it shipped straight to me so I got it early and I opened the box to find...

It is ^,^ now if only i could get a real job lol, and she's aware of Mia and that we are close friends however not as close as we once were as Mia is coming more into contact with drugs (inevitably i guess) and with that obvious problems which personally i have (probably unfairly) zero tolerance for. So a lot will depend on the life decisions she choices for herself in the coming years.

Sorry Noir, I had forgotten about Mia. I was talking about my granddaughter when I said sharing with a younger woman. My granddaughter saw your pic and thinks you are "awesomely gorgeous"; but who can blame her for thinking thus.

Only a few pics to share as Amy's head was being silly so we didn't get out much...but we finally had an outing to my favourite city in the UK, Wells! So a few wee pics of it...

The front of the Cathedral;
http://i80.photobucket.com/albums/j176/jonathan-mcc/5bb4ed77.jpg

Inside the main chamber (this place is *huge*, perspective kinda distorts it a little but the archway that looks near the end is only halfway down the chamber);

Three of the six staid glass windows at the back of the main chamber, though the phone sturrgled in the light...;

The Church Organ;

A street facing the Cathederal, where I will live when I have an odd million to my name;
http://i80.photobucket.com/albums/j176/jonathan-mcc/1bc536cd.jpg

Webchose to go to Wells on the Wednesday because of its local weekly Market, which are always filled to bursting with bargin books, between Amy and I we spent £15 (~$20) and these be our spoils, that included sharing the cost of a £5 vegan cookbook, though I only made two purchases; 'Homage to Catalonia' by George Orwell (read it that night, great book) and 'The Legacy of the Middke ages' which is a compendium on how the philosophy, religion, place of woman, common law etc in modern day Britain (1920s Britain) was shaped by the middle ages.
http://i80.photobucket.com/albums/j176/jonathan-mcc/ecf5c291.jpg

Lastly I was cooked and baked all manor of awesome noms, but the runaway awesome nom has to go to this banoffee pie, tis the first banoffee I've been able to have in near a year an omg just too good >,<

For a detailed recipe id have to ask my gf, but the general idea is a breadcrumbs base, the middle layer is thick toffee with slices of banana in it (banana/toffee/banoffee) and the top layer is a thick cream, omnomnom.

And I go to them for the architecture, the art, and (most importantly IMO) the history.

History be cool indeed ^,^ and like, in Wells Cathedral i was able to stand at the exact spot that Oliver Cromwell did in the 17th Century, and see the marks he left when (after damning the Catholic Church) he gave a Font at the front of the Cathedral several whacks with his hammer, taking chunks out of it (:

As for le pie, you will need...

Ingredients
For pie base:

250g Vegan Digestive Biscuits
1 tablespoon of Golden Syrup
80g melted soya butter

For Filling:

4oz (115g) brown sugar
4oz (115g) margarine
1 tbsp golden syrup
4floz (100 ml) soya milk
1 dessert spoon cornflour
1 tsp vanilla essence
3 large bananas
375g Full Fat Coconut Cream*
3 tablespoons powdered/icing sugar
1 teaspoon cocoa powder

Method:
1 - Crush digestives by placing in a bag and crushing with a rolling pin, or pulse in a food processor. Transfer the crushed biscuits to a medium mixing bowl.

2 -Melt the vegan marg or butter in a small pan and add the syrup, mix until well combined then allow to cool.

3 - Add melted butter mix to the crushed biscuits and combine well until , then transfer into 9″ – 10″ cake tin or dish and cover the bottom & sides. Chill in the freezer for 20-25 minutes.

4 - Meanwhile, in a saucepan with sugar thermometer attached, gently heat the sugar, margarine and golden syrup.

5 - Constantly stirring the mixture with a non plastic spoon, boil up to soft ball stage. Simmer for 5 minutes, to ensuring not to let the temperature go higher.

6 - Meanwhile, combine soya milk and heaped dessert spoonful of cornflour in small pan until a thick white sauce is made. Stir in half of the vanilla essence.

7 - Remove toffee from the heat and allow to cool for a couple of minutes. Beat toffee whilst adding the white sauce to it. Mix thoroughly and remove any un-dissolved lumps of cornflour.

8 - Slice the bananas thinly, then remove cake tin & base from the freezer and line banana slices evenly on the base.

9 - Once cooled to room temperature, poor the toffee mixture over the top, ensuring you cover the bananas completely, then place back in the fridge until cooled.

10 - Spoon Coconut Cream into a chilled mixing bowl (preferably a glass bowl) & sift in the powdered sugar and begin whisking with a chilled whisk or electric hand mixer (with chilled beaters). The cream is done when it thickens and soft peaks form when a whisk or beater is lifted. Stiff peaks may be achieved if the coconut milk is particularly high-fat, but don’t whip the cream too long as it will warm and liquefy.

11 - Remove cooled cake base etc from the fridge & pipe or spoon the coconut cream on top of the Banana & Toffee .

12 - Refrigerate for an hour (longer if possible) before serving. Dust with Cocoa Powder.

* The best way to get thick coconut cream is to refrigerate an unopened can for at least an hour, or freeze for about 20 minutes. Be careful not to agitate the can as you want the full fat cream to rise to the top, leaving thinner coconut liquid underneath. Remove from refrigerator or freezer, and carefully open the can. Using a small spoon, skim the cream from the top, and transfer to a chilled bowl. For this recipe you’ll need 2 – 3 cans of full-fat Coconut Milk.

-----

Obviously this is the Vegan way, so feel free to sub in non-vegan butter etc, but the kindness that goes into the pie by no using animal products makes it taste better, trust me =p

Moving!

All the paper works processing atm but i should be moving away from home to my own wee flat within the next 2/3 days. And idk how long it'll take the internet to get set up but likely a week or two so my online activity will prob drop in the meantime.

As for the flat itself, its a wee three story one, just above a florists dead in the centre of town, has come fully furnished and is only £350 per month! (Like $500) Much win (:

Quick updates - Good and bad news.

Bad news, i didn't get the flat, in the most unimaginably bad continuum of circumstances; The estate agent lost my letter of enquiry, so i had to send a new one, then my dads bank refused to accept him as a guarantor, because they said his signiture on the form didn't match the one on their record, even though the form also contained a photo-copy of his driving licence. Then my bank refused to complete the process without an additional charge, and then finally, the day i got confirmation that all was fine, i went to the estate agent and he said that they had sent me a letter to say the landlord had accepted another offer earlier that week. Since the letter to me never arrived i can only assume it too was lost in the post...le sigh.

But but some good news, I got a new job!
Working for an energy company, i put my CV in last tuesday, had a telephone interview on Wednesday, then a 2 1/2 hour (!) set of assessments and interviews in Thursday, and was offered the job on Friday. So i start my training tomorrow morning (:
andand as i have to be all clean shaved and 'business like' for the job (because the man doth not smile on bouncy haired hippy types) this be my new look for the present...how short haired people cope in the winter idk, my neck and ears be so cold D:

My first 'full-time' job out of college was as commercial representative of phone company. I was promoted in 6 months to major accounts. At the one year marker I was pulled off the accounts and working on MSA's related to my statistical background with sociology. Good gig. Should have kept that job and not gotten married. LOL!
