Oh, how about prepping for an entire menu change this past Wednesday then also prepping for 400 covers for Easter Brunch on Sunday?

This means days no less than 10 hours (avg is 12), no sitting down, no actual breaks, snacking on small items as you go just to keep energy up-though a Monster Rehab gives a nice boost when needed. I am so happy to have today and tomorrow off...
